Gluten-free apple-almond-sticks

I saw a similar recipe a few month ago while browsing through a magazine and I remembered the flavour of apple-strudel made by my beloved grandmother...

Active time: 40 minutes

Ingredients:

  • 100 gr buckwheat
  • 200 ml milk
  • 1 egg
  • 1/2 tsp cinnamon
  • 100 gr almond sticks
  • 100 gr sugar
  • 50 ml water
  • 1 pk vanilla sugar
  • 3 apples
  • a few walnuts
  • butter to fry
  • icing sugar
  • toothpicks

Start with the apple slices: core apples but do not peel and cut into thin slices. Take a medium-sized bowl and add the water, the apple slices, almond sticks, sugar, vanilla sugar and cinnamon and bring to cook. Stir it well and cook until you get a creamy apple sauce. Then leave to rest.

In the mean while mix the buckwheat, milk and egg to a semi-liquid dough. Take a frying pan, melt the butter over a low heat and add the dough by using a soup-ladle (it is helpful to get the right quantity) then fry until golden (fry the pancake on both sides).

The next step is to cover the pancake with the apple sauce and the walnut crumbles.

Roll it up and let cool. Then generously cover with icing sugar.

Cut the rolls into slices (two fingers thick) and fix them with toothpicks. Take a large, flat plate and arrange the apple-almond-sticks over it.
